Tahdig is the crispy, golden crust that is formed at the bottom of every
rice or pasta pot. It is a very well-known and delicious
Persian food.
Tahdig is either made of layers of potato, bread,
rice or pasta, that is properly fried in a very thin layer of hot oil at the bottom of cooking pot. Basically in the Persian cooking recipes, we have at least four types of classical tahdigs, namely:
-pasta tahdig
-potato tahdig
-
rice tahdig
-bread tahdig
In the Persian (Iranian) food culture, pasta tahdig and potato tahdig are very favorable, even much more than the main course!
