Alternative name for stinky tofu, the delightfully pungent national dish of Taiwan. Also enjoyed in other East Asian cuisines, stankfu is the result of soaking regular tofu in a fermenting broth of rotting vegetables and possibly shrimp for up to six months. It is frequently fried and served with chili sauce.
