Squarkie

A combination or crossover between a dessert square and a cookie. A softer square treat, typically like a fluffy cookie dough, baked then cut into squares and then baked a second time to firms the edges with the centre staying soft and moist.
I made some squarkies because I didn't have time to make multiple batches of cookies, so I spread the dough into a sheet pan and baked it, then cut out squares.
