Delicious cupcakes made with rum. The following ingredients
will make you a nice batch of rumcakes:
1 cup chopped pecans, toasted
1 cup 2 tbsp all-purpose flour
2 tbsp cornstarch

4 tsp baking powder
1/8 tsp salt

4 cup granulated sugar
2 large eggs, room temp

4 tsp pure vanilla extract
4 tbsp unsalted butter, melted

4 cup vegetable oil
1/2 cup milk, room temp
1/2 cup rum
1/2 vanilla pudding snack
You can also cook the cupcakes first, and then let them soak up a little bit of rum. Butter, rum and sugar
will make a nice glaze as well.
