From the root word "Zombie" Defined as the body of a dead person given semblance of life and "-Esque" an adjective suffix indicating style, manner, resemblance or distinctive character.

Popularized by zombieseatpeople.com, the term can be used in the context of somone is truly zombie like, as opposed to actually being a walking corpse. Of which the undead would not be zombesque because they would genuinely be a fucking zombie, and genuinely want to eat your face off.
