Named after an anagram of "nagasaki", saganaki is any one of a variety of
Japanese dishes prepared in a small frying pan, the best-known being an
appetizer of fried cheese. It is commonly flambéed in
North America.
I had no idea that saganaki was basically fried cheese until my friend ordered it at
the Greek restaurant; now I’m obsessed with this
cheesy delight, especially when it’s flambéed!
