The statement said either during or immediately following someones attempt to make an extremely valid point that makes the person stop talking and listen to your potentially much less important and usually unrelated opinion. The best setup to a conversational punchline. Ever.
S- "I've never told anyone this before C, but I think I have an authority fettish because of my corrupted relationships to male figureheads in my childhood."
C- "Here's the thing -I'm hungry. Buy me a McDouble."

"Here's the thing" can be used as a buildup to an insult and to make sure you'll have the attention of the receiving party. Ending it with a "that's more or less the thing" will let them know that you've finished conveying this information.
Jack: My allegiance is to the law, I'm paid to uphold the law.

The single greatest opening of a persuasive statement or rebuttal. Also if used correctly an effective Jedi mind trick.
Persuasive statement:
(person 1)"Here's the thing, you should go buy me a Pepsi."(note no question mark so it cannot be refused)(person 2)"Uh, ok."

Rebuttal:

A term one says as they’re about to either give valid reasoning for something (often with a bit of sass) or spew absolute bullshit
Ex. A: “Here’s the thing; if you’re really trying to lose weight, you should probably avoid eating fast food every other day”

Ex. B; “Here’s the thing; you can’t be related to a WWII vet because the Holocaust didn’t even happen”

A Marvel joke used for when someone is going to spout a bullshit reason but instead of saying said reason, attaches an image of The Thing/Benjamin Grimm usually doing something ridiculous or intellectual.

Mostly used in the game community known as “Marvel Rivals”
Person 1: If you can give me one good reason I’ll do it
Person 2: Well you see… here’s the thing.

Person 1: Why the fuck does this Thing keep targeting me?!

A phrase often used when trying to explain why something is, isn't, needs to be, or just in general. This phrase often talks about an invisible or nonexistent object or "thing." Will often cause anger or laughter.
Guy 2: Hey why do these things run away when I get close.

Guy 1: Now here's the thing David-

Guy 2: I swear to God if you say "Now here's the thing" one more time I will strangle you.

Guy 3, 4, 5, and 6: Enormous uproar of laughter.

city chicken 

A food native to Pittsburgh/Western Pennsylvania in which cubes of pork and/or veal are put on a short, wooden skewer, breaded, then baked and/or fried.

I've heard that city chicken originated during the Great Depression, when folks didn't have enough money to buy full cuts of meat, so they assembled meat scraps on a wooden skewer, creating a make-shift drumstick. Hence the name.
