Mexicanoing the shit out of something is a sentence used( typically by Hispanics/Latinos) when working on a project (that would normally take the common folk hours to complete) in order to ease the amount of time said task is to be done.

Mexicans are said to be hard workers, therefore the term "mexicanoing the shit out of something" is commonly used as a way to imply that things need to be done in a rapid manner.
The dishwasher at the restaurant quit in the middle of service therefore Junior and Ellis are going to be Mexicanoing the shit out of something (the dish pit) at the end of the night
