Found in service industry jargon. The tasks waiters and waitresses must do in addition to basic server duties. Examples: Filling condiment containers, setting tables, rolling silverware, stocking stations.
Part of the sidework at my restaurant is folding napkins to look like swans.

When telling a story that is funny, like a side note, you jump to another joke, either germane or not to the story. Can be narrated, an inside joke, or the way people who ADHD talk when explaining themselves or situations.

Similar to the joke telling that Ron Howard would use in Arrested Development.
I was telling Bob a story and then I told a sidejoke about the night and got a bonus laugh.
