Rip your head off and shit down your neck

As can be gathered from the expression, it indicates a state of intense anger and annoyance, so much so that the person making the threat is ready, willing and able to inflict physical pain and degradation upon the person who has annoyed them. While it may not literally result in the removal of the offenders head and defecating into the stump, it will usually result in physical violence and a humbling of the person who caused the offence.
The expression that is believed to have originated with the British Royal Navy. It gradually became used within all branches of the armed forces and later spread to the civilian organisations associated with them before obtaining wider usage.

When someone walks their dog, but does not bring a bag with which to clean up the poop, and has to flee the scene.

Having no intention of cleaning up after your dog.

Friend: "Man, that dude's dog just shit in my yard and he didn't clean it up!"

Me: "Oh! It was a shit and run!"

eat shit and die

The definative definition after twenty years of hearing it used in context: "I command you to eat shit (which is the most putrid experience one can imagine as a living being) and then die (which many view as the most undesirable state of being--curiously worse than eternal torture, unless dying and going to hell are synonymous). It represents an ill feeling toward another where simply eating excrement does not do justice to offense given, nor is dying: both must be experieced to satisfy vengence.
