Undeclared income that is not taxed or put through a bank.

The white van man only takes cash in hand.

cash-in-hand 

Being paid cash, rather than the money being deposited into a bank account. This also prevents taxes being deducted.

Matt: Hey man, I just got paid.
Craig: Hey, i'll come with you to get the money out.
Matt: No need, I get paid cash-in-hand.
