A pizzommelier, or pizza steward, is a trained and knowledgeable pizza professional, normally working in pizza restaurants, who specializes in all aspects of pizza service as well as pizza and drink pairing. The role is much more specialized and informed than that of a pizza delivery person: In fine pizza dining today the role is strategically on a par with that of the executive pizza chef or chef de pizza.
The pizzommelier sniffed at the pizza and deftly described the acetic undertones of day-oldness along with the subtle earthy smells of oil-soaked cardboard and the yeasty overabundance of crust.
