Earth Pearls

The edible rhizome of Stachys affinis also known as crosne, Japanese artichoke, or knotroot. The rhizome looks like white pearls pressed together and tastes like a gentle and slightly sweet radish raw. When cooked it takes like a slightly nuttier artichoke.
You can harvest earth pearls in the fall.
