Not pork fat, but the large intestine of a hog. Signature variety meat of soul food and Southern cuisine in general. Cleaned, cut, and then fried or boiled.

in the navy they would have afro-american themed food every so often.....when that happened the mess decks would literally smell like sh*t from those things (chitlin)....needless to say , the burger line would be very popular that day...
