Meaning: Heckdoodle is a word meant to express another word. For example, instead of saying "crap" you might say "heckdoodle". Or instead of saying G-d as some people find that offensive, you would say "Oh my heckdoodle nuggets".
It's quite silly, however it is used commonly throughout the Minecraft game and the Mineplex network specifically.

Origin:
In Minecraft this word originated as a word for staff members on the Mineplex network to use. When they wanted to say something, like "crap" but they could not because they were staff, they said heck instead. So, people said "holy heck" etc etc. It was fairly widespread until one person decided to say "heckdoodle". It quickly caught on, and soon it became a sort of became a real word people used.

At one point the word became so widespread that in the server's discord saying the word "heckdoodle" would have a bot automatically react with the :fire: emoji.
