You always hear (or watch a movie about) a professor that thinks the mailmsn is a spy, but you hardly ever hear about one that thought Harriet Tubman was a spy from the Motherland or that Jim Carrey was spy from Canada, these professors seem to have an imagination limited to what they see when they walk outside.
The professor with the beautiful mind didn't share his thoughts about the waittress at IHOP being a spy from Central America because he was afraid that people would think he was racist if he said it out loud to anybody.

Their imagination seems to always be limited to what they see when they first walk outside in the morning, despite people's claims that their minds are so beautiful.

he's like a beautiful mind 

this refers to a person who does something seemingly irrational, pointless, stupid, fucked up, unthinkable (like the thought would never ever cross your mind), etc. in an attempt to solve a problem, complete a task, etc. Then, that person accomplishes said problem or task by their unorthodox solution and leaves others astonished that the idea worked. It is at this time someone would say this simile.
Jake had to put away the pool chairs, so to minimize the number of trips, he used a soda cooler with wheels to cart many chairs. He did this by balancing a chair on the edges of the open-topped cooler, then stacking the other chairs on that one. This plan seemed bound to fail, but when he succeeded some one said, "he's like a beautiful mind."

city chicken 

A food native to Pittsburgh/Western Pennsylvania in which cubes of pork and/or veal are put on a short, wooden skewer, breaded, then baked and/or fried.

I've heard that city chicken originated during the Great Depression, when folks didn't have enough money to buy full cuts of meat, so they assembled meat scraps on a wooden skewer, creating a make-shift drumstick. Hence the name.

The rush of neurotransmitters and neuropeptides triggered specifically by watching the Seven Dwarfs march home singing "Heigh-Ho" — that particular high of pickaxes, whistling while you work, and communal domestic bliss in a cottage built for men half your height.
I only meant to watch the Heigh-Ho scene for the endwarfins, and then it was two hours later and I'd watched the whole movie.
