Plex is the Texas version of "beef".

Notably the song "Got Beef?" by the Eastsidaz sparked Houstonians to begin quoting "Got Plex?" in-line with the long-running of the "Got Milk?" ad campaign of the 90's-2000's. But Plex has been used as slang in Houston for decades and usually refers to aggravated beef from twisted lies.

Plex is short for perplex/complex. Meaning to confuse things. Its slightly different to beefing, as it generally means someone has started rumors, or is confusing fact and fiction, leading to agitation and a running grudge.
