An individual who is distressingly committed, to the point of failing to eat food, sleep or associate with other carbon based life forms, to building authentic looking and working cockpit mock-ups, both military and civilian, of aircraft, spacecraft, water-borne craft and ground vehicles using computer simulation.
After losing a few pounds, Del, an avid simulist in the throws of a new aircraft cockpit build, was reminded by his sister the only thing he would be flying if he didn't eat would be a pine box.
