A staple of any Australian election day, the democracy sausage is a simple, yet beautiful, tradition: a barbecued sausage, laid gently on a single piece of white bread (or a white roll if you're fancy), optionally topped with grilled onions and either tomato or barbecue sauce. Must be consumed one-handed by folding the bread around the sausage, and eaten from one end. Found at polling places around the country, usually primary schools, sometimes in the vicinity of a cake stall.
