Dirty Kipper

A colonial era cocktail believed to have been first made at Jessop’s Tavern in Old New Castle and served to Founding Father Caesar Rodney. It was originally made with Madeira and salted kipper. Today, Dirty Kippers are typically made with kipper (or any variety of salted fish) with tequila.
