In competitive Pokémon jargon, shitmon usually refers to a Pokémon that has very low viability for the standard format or tier; essentially, it means shit Pokémon.

"Have you seen that Hoopa-Unbound dropped to RU? Can't believe Gamefreak created a shitmon with 680 base stat total."
