to have a strong liking for; to take great pleasure in.
This sense of 'stab' derives from its earlier meaning of 'to sexually penetrate', apparently by way of an analogy between liking a thing intensely and sticking one's member into it.
Can be intensified as 'poo stab' (a reference to anal sex), which means to REALLY like something.

"I really stab this tune!"
"Oh man, I poo-stab that kazoo solo!"
