The word black is merged into it because of the fact that those who add a ton of extras (think bread crumb toppings or added veggies) tend to be caucasian rather than African American.

It is typically used in a positive way, to praise rather than demean, a tradition more often seen from a particular race.

The phrase may be simplified into one word by dropping the cheese and simply saying "blackaroni."
As hard as it is to say it no to bacon and onion in anything, I really just want you to make be some blackaroni and cheese mom.
