A particularly stealthy and sly mexicano man. Can be used to refer to an illegal immigrant, or any mexican who portrays a general sneakyness about him.
Me: Yo look at Pedro over there, he's lookin shady as fuck.

Drew: Ya dude I heard he jumped the fence and hid from the Border Patrol in a barrel for 3 straight days!

Me: Wow, what a god damn sneak mex!

Ameri-Mex 

Typically a term used to describe fast food items labeled as Mexican but are not authentic style.
It's not real Mexican food, its more like Ameri-Mex
1) The characteristically spicy style of Mexican food of Texas, influenced by non-Mexican cuisine (i.e. Texas barbecue).

2) The style of norteño (northern Mexican) music associated with South Texas; also known as Tejano. Instruments used include the accordion and the bajo sexto (a twelve-string bass-rhythm guitar).
We're going out for some Tex-Mex food tonight in San Antonio, so bring your Pepto-Bismol.

Dirty Mex 

A cheap Mexican eating establishment which is usually located on your local state street. It will most likely have a California burrito as an item on the menu. It is referred to as 'Dirty' as it is usually cheap, greasy and quick as opposed to a classy 'sit-down' Mexican restaurant.
Bob just texted me back, and he says he just wants to get Dirty Mex before the game because he is broke.

Hoosier Mex 

Hoosier Mex (also known as Indiana Mex) is what Indiana, USA natives call their Mexican-American styled food. Similar to Tex-Mex food, Hacienda Mexican Restaurants which is solely based in Indiana, has been around since 1978 uses this term to describe their food offerings. While the corporate owners are not Mexican born or raised, they have coined this food classification to help inform non-Indiana natives (or those not located in the Goshen, IN · Mishawaka, IN · South Bend, IN · Plymouth, IN · Evansville, IN · Elkhart, IN · Kokomo, IN · Michigan City, IN · Warsaw, IN areas) that they are not, an "Authentic Mexican Restaurant" but rather, offer "their take on Mexican classics" and are Americanized Mexican styled, not-so-spicy, but craveable food.
I went to Hacienda in Indiana thinking I was going to get authentic Mexican food but instead I got Hoosier Mex.

Bori-Mex 

A person of Puerto Rican (Boricua)and Mexican descent.
She's half Puerto Rican and half Mexican, so she's a Bori-Mex.

Faux Mex 

Overly fancy Mexican fusion cuisine. Often found in high end neighborhoods of big cities
Him - How about Mexican tonight?
Her - We could eat at La Perla...
Him - Fuck that, no self respecting caballero would eat a lobster and prime rib burrito - that shit is faux mex.
Her - Then we should head to La Cantina for a bucket of Pacifico and beef and bean burritos.
