The original jack o lantern in the folklore was a parsnip so it continues the tradition. Sometimes the leftover parsnip trimmings are used to make Pastys which are a regional dish
I carved some 'Gander Jacks with my parents last weekend. Our porch is looking very festive now and we made some kick ass Pastys
