Tabasco Mexico - located in the southeast of the country, bordering the mexican states of Campeche to the northeast, Veracruz to the west, and Chiapas to the south & the country of Guatemala to the southeast. It has a coastline to the north with the Gulf of Mexico. Most of the state is covered in rainforest as, unlike most other areas of Mexico, it has plentiful rainfall year-round. The state is also home to La Venta, the major site of the Olmec civilization, considered to be the origin of later Mesoamerican cultures. It produces significant quantities of petroleum & natural gas.

Typical dishes include those with iguana meat, gar fish, beef puchero, smoked oysters, totopostes, pork with beans and tortillas made with banana and fresh corn

Chocolate is still found in preparations which have not changed since pre Hispanic times mostly as hot or cold beverages. The most common cold chocolate beverage is pozol, served fresh or fermented.known for its sweets such as sweetened fruits in corn husks, often accompanied by a cacao and corn beverage called chorote.

Same name .Traditional masculine dress consists of a white shirt & pants, with black shoes, black belt, a hat in a style called "chontal" red handkerchief around the neck. This dress is based on an older type of clothing called traje choco, made of cotton cloth called manta, used to work in the fields.

Traditional female dress consists of a wide skirt trimmed with a ruffle. Under the skirt is a slip designed to fluff the skirt and make the waist look smaller. The blouse is white with an embroidered band in bright colors, often with flower &/or animal designs. It has short sleeves ending in a square form in the lower part. The woman often carried a small handkerchief and a shawl called a rebozo in bright colors, often complementing the skirt. The shoes are black.

Coahuila Mexico

Coahuila Mexico - 1 of the 32 states of Mexico , Coahuila borders the Mexican states of Nuevo León to the east, Zacatecas to the south, Durango & Chihuahua to the west. To the north of Coahuila there is Mexico–United States border, adjacent to the U.S. state of Texas along the course of the Rio Grande (Río Bravo del Norte). It comprises 38 municipalities .

The largest city & State Capital is the city of Saltillo; the 2nd largest is Torreón (largest metropolitan area in Coahuila & 9th largest in Mexico); the 3rd largest is Monclova (a former state capital); the 4th largest is Ciudad Acuña & the 5th largest is Piedras Negras.

Coahuila is largely arid or semi-arid, but the rivers of the State support extensive irrigated agriculture, particularly cotton. The Parras district in the southern part of the State produces wines & brandies. The pine-oak forests of the Sierra Madre produce timber.

The portion of the State west of the Sierra Madre Oriental lies on the Mexican Plateau, is part of the Chihuahuan Desert.

Coahuila is 1 of Mexico's major steel & wine producers
& is ran by the Los Zetas Cartel.
Coahuila Mexico , About 95% of Mexico's coal reserves are found in Coahuila, which is the country's top mining state.

Saltillo & the Southeast region have one of the largest automobile industry in the Mexico & the major industry in the state, hosting companies such as General Motors & Chrysler assembly plants.

As in other northern Mexican states, Coahuila's dishes consist of beef, veal, lamb or goat. Tacos, marinated flank meat, beef jerky, fritadas (goat in its juice) and machaca (beef jerky with scrambled eggs.

Machaca con huevo -- dried, salted beef that is rehydrated, lightly roasted over fire, soaked in water to remove the salt and to soften, then pounded to pieces, traditionally over a mesquite trunk, by a mesquite pole. Then it's put in water again to get out more salt, & finally squeezed & fried in a skillet. A salsa is made with onion, chili, tomato & oregano, the salsa is mixed into the fried beef & the whole thing is cooked for about 5 minutes. Most people expect to eat this with wheat tortillas, beans and coffee. This particular machaca also contains eggs

Cajeta de membrillo & Cajeta de perón -- traditional cajetas are typically gelatin-based deserts congealed in a round box 4 or 5 inches across, made of thin wood slivers. Membrillo is quince, & perón is a pearlike fruit .

Chihuahua Mexico

Chihuahua Mexico - located in the north-west part of Mexico and bordered by the states of Sonora to the west, Sinaloa to the southwest, Durango to the south, and Coahuila to the east. To the north and northeast, it shares a border with the USA States of New Mexico & Texas. Its capital city is Chihuahua City the largest city is Juárez. And Cuauhtémoc.

Tesguino a beer made from malted corn that Tarahumara, a tribe from the Sierra Madre valleys ,This drink is strained and should be enjoyed immediately.

Sotol is a Mexican spirit distilled from a group of plants of the Dasylirion , aka desert spoon. Sotol a close relative to tequila & mezcal.

The drink is made by roasting, fermenting & then distilling piña—the center of the plant. It has a smoky character similar to mezcal. The flavor is smooth & mellow & the drink has a warm finish.

Chile pasilla con queso is a Mexican chili pepper-based dish .

Queso Chihuahua is a Mexican cheese made from cow's milk. aka Menonita, referring to the Mennonite community in Chihuahua that first produced it.
Chihuahua Mexico is primarily identified with its namesake, the Chihuahuan Desert, it has more forests than any other state in Mexico, aside from Durango, Due to its variant climate, the state has a large variety of fauna and flora.

The state is mostly characterized by rugged mountainous terrain and wide river valleys.

Puebla mexico

Puebla Mexico - located in east-central Mexico bordered by the states of Veracruz to the north & east, Hidalgo, México state, Tlaxcala & Morelos to the west, & Guerrero , Oaxaca to the south. The origins of the state lie in the city of Puebla, which was founded by the Spanish in the valley in 1531 to secure the trade route between Mexico City & the port of Veracruz.

Bataille de Puebla which took place on 5 May, Cinco de Mayo, 1862, near Puebla de Zaragoza during the 2nd French intervention in Mexico. French troops under the command of Charles de Lorencez repeatedly failed to storm the forts of Loreto and Guadalupe situated on top of the hills.

The climate of Puebla is subtropical, with a dry season from November to April & a rainy season from May to October.
Puebla mexico common to the state include atole with chili pepper (chileatole), spicy mole verde, barbacoa, chilate with chopped onion, cemitas, cecina, guacamole with lime, & mole de caderas or mole espinazo. Many of these are found in the Sierra Mixteca region. However, the state is best known for cemitas, mole poblano, chiles en nogada & chalupas.

Campeche Mexico

Campeche Mexico - Located in southeast Mexico, it is bordered by the mexican states of Tabasco to the southwest, Yucatán to the northeast, Quintana Roo to the east, and by the Country of Guatemala to the south. It has a coastline to the west with the Gulf of Mexico. The state capital, also called Campeche, was declared a World Heritage Site in 1997. The formation of the state began with the city, which was founded in 1540 as the Spanish began the conquest of the Yucatán Peninsula. The city was a rich and important port during the colonial period, but it declined after Mexico's independence. Campeche was part of the province of Yucatán but split off in the mid-19th century, mostly due to political friction with the city of Mérida.
Much of Campeche mexico state's recent economic revival is due to the discovery of petroleum offshore in the 1970s,

The name of Campeche is derived from the Maya name of a settlement called “Ah-Kin-Pech” where the city of Campeche is now. When the Spanish first arrived to the area in 1517, they called it Lazaro, since "the day of our landing was St. Lazarus' Sunday". The native name means “place of snakes and ticks.”

Tamaulipas Mexico

Tamaulipas Mexico - is located in northeast Mexico and is bordered by the mexican states of Nuevo León to the west, San Luis Potosí to the southwest, and Veracruz to the southeast. To the north, the U.S.–Mexico border with USA state of Texas, and to the east it is bordered by the Gulf of Mexico.

Since the 1970s. This state is known to be the site of a territorial struggle between the Gulf Cartel and Los Zetas Currently as 2014 on ward Tamaulipas continues to be affected by violence .

Mangos a la canela- mango, sugar, and cinnamon stick are covered with water simmered until the sugar dissolves.
The mango is removed from the pan and the remaining liquid is reduced until syrupy & thick. slices of mango are arranged on a plate, drizzled with syrup can be hot or cold, dessert is typically served with a scoop of vanilla ice cream on the side.
Tamaulipas mexico capital city is Ciudad Victoria, the state's largest cities include Reynosa, Matamoros, Nuevo Laredo, Tampico, and Mante.

Polk had desired to annex Mexican territory as far south as Tampico although his negotiator Nicholas Trist, disregarded this & settled on a border with Texas on the Rio Grande.In the wake of the war, Tamaulipas remained an object of interest to American expansionists. The climate was considered suitable for the spread of slavery by Southerners who desired the admission of new territory, then Governor of Mississippi Senator Albert Gallatin Brown wanted Tamaulipas, Potosi, and 2 other Mexican states & wanted them all for the same reason for the plantation and spreading of slavery.

During the 1860s
France also wanted conquest of Tamaulipas.

Tamaulipas was originally populated by the Olmec people and later by Chichimec and Huastec tribes.

Tlaxcala Mexico

Tlaxcala Mexico - located in east-central Mexico, in the altiplano region, with the eastern portion dominated by the Sierra Madre Oriental. It is bordered by the mexican states of Puebla to the north, east and south, México State( Located in South-Central Mexico) to the west and Hidalgo to the northwest. It is the smallest state of the republic.
