"Underused Parts Of Everyday Animals". A food movement, popular in Vancouver B.C., aimed towards making use of the entire animal. Also a term for offal and variety meats. Cow tongues, chicken livers, and veal thymus are viable, tasty meat options.

Those were great tongue tacos last night! Can we have UPOEA for dinner every night?
