An East Texas classic dish, originating in the small town of Hudson, Tx, and gaining popularity around Texas as the school alumni continue their career paths in various cities.

Bistec is served with los frijoles, la ensalada, Las tortillas, and El chile. Some variants see the chile replaced with postre.

A traditional serving of Bistec is concluded with helato de chocolate, flan, galletas, and bobones, followed with shots of tequila. All adults toast to the word "hip," pronounced "EEP!"

All Hudson alumni from the class of 1997 through 1999 are familiar with this dish, and it remains a favorite in their small, charming alumni community.

"Bistec. Bistec? Quiero, quiero, quiero El Bistec."
