A snow rabbit is basically the male equivalent of a snow bunny, a white guy who goes for black girls or even black guys. it could also be a slang term for an attractive white guy.

"I wanna ask out Richard on a date but my White, Melanin Deficient, Mayo Monkey ass has NO chance! he's a literal snow rabbit."
