The proper Latin plural of "octopus" is "octopodes" (pronounced in English "awk-t@-POE-deez"). Saying "octopodes", however, is like pronouncing the first "r" in "February"--something seldom done and appreciated, however greatly, by very few. Your best bet is just to stick with the good old English pluralization, "octopuses".
