The crunchy piece (puri) is cracked opened and filled with a favoured combination of vegetables, spices, sprouts etc. and finally filled with flavoured water (pani). They are also locally known as golgappas. water crunches' vendors can easily be found on street-sides of Mumbai, Kolkata.
