It's from Madden 2005. If you properly utilize the hit stick you can really lay a huge hit on the ball carrier. The term can also be used outside the game though.

A game where each person gets 3 sticks, the goal is to hit the other players with the sticks, while avoiding getting hit. First person to break all 3 sticks on another person wins. Game does not end until someone has won.
