To sleep. I'm not sure of how many ways to use it though.
If you were sleeping you wouldn't be "z'ing."
The only way I know how, or have heard anyone use it is in the example.

Slang: I'm going to cop me some z's
Translation: I'm going to get some sleep

To engage in the activity of sleeping. This usually occurs after long periods of strenuous activity and/or sex. However this usually refers to a more deep sleep than that of a light sleeper.

A way to tell a friend to get some sleep, as opposed to "Carpe Diem"; a send-off to an underslept buddy, can also be substituted with "Carpe Z-em"

Quote from TV series Fresh Prince of Bel Air. Will - "G, I'm gonna take Lady Penelope out to the Opera, Cop a few Z's ( Cop Z's ), and show Uncle Phil that im responsible. This weekend, I'm with Ziggy."

When one is sleeping, in text it is shown as "ZZZzzzZZZzzzZZZ". It Indicates snoring. There for to Cop Z's means to obtain sleep.
