The heel-toe shift is a racing technique used to downshift while braking. It's used mainly when approaching a corner at high speed, and you wanna slow down and downshift as fast as possible.
To correct another definition here, you apply brakes and depress the clutch pedal, and move the shifter into neutral. Keeping your ball-of-foot/toes on the brakes, pivot your right foot so that your heel can "blip" the throttle, immediately move the shifter down a gear, and then release the clutch pedal smoothly before the revs drop down again.

This is a well known yorkshirism. The etymology of this word dates back to the 16th century when the then monarchs would descend upon the northern territories in order to further their hunts. It was a well known practise for them to disguise themselves as 'peasants' by donning stolen goods they would take from their subjects and covering their faces with ash from the fire. They would add a ferret at their heel to complete the picture and ensure that none in the villages would suspect their entry. The ferret was meant to symbolise earth and good nature amongst the then pagan beliefs which had percolated through the northern territories. After completing this disguise the regent would take to stalking the lower classes for prey.

The event resulting when a skier blows out of both ski bindings at the heel pieces in a forward fall.
Shit son, I stuffed my ski tips into that bump and had a double heel ejection.
The powder was so deep, my skis went submarine and I did a double heel ejection.
