heres a recipe
Ingredients:
For the Dough:
• 2 cups all-purpose flour
• cup oil or ghee
• teaspoon salt
• cup water (adjust as needed)
For the Filling:
• 3 medium potatoes (boiled & mashed)
• cup peas (boiled)
• 1 small onion (finely chopped)
• 1 teaspoon cumin seeds
• 1 teaspoon garam masala
• teaspoon turmeric
• teaspoon chili powder (optional)
• 1 teaspoon coriander powder
• 1 teaspoon salt
• 1 tablespoon oil
• 1 teaspoon ginger-garlic paste
• 2 tablespoons chopped cilantro
• 1 tablespoon lemon juice
For Frying:
• Oil for deep frying
Instructions:
1. Make the Dough:
• Mix flour, salt, and oil/ghee in a bowl until crumbly.
• Gradually add water and knead into a stiff dough. Cover and let rest for 30 minutes.
2. Prepare the Filling:
• Heat oil in a pan, add cumin seeds, and sauté onions until golden.
• Add ginger-garlic paste, then mashed potatoes, peas, and spices. Stir well.
• Add cilantro and lemon juice. Mix and let cool.
3. Shape the Samosas:
• Divide dough into small balls and roll each into a thin oval.
• Cut in half, fold into a cone, and seal with water.
• Fill with the potato mixture and seal the edges tightly.
4. Fry the Samosas:
• Heat oil in a pan over medium heat.
• Fry samosas until golden brown and crispy.
• Drain excess oil on paper towels.
5. Serve:
• Enjoy hot with mint chutney or tamarind sauce!
