rubstrate

When smoking meats, rubstrate = the surface area on which you can apply the dry rub. For example, scoring the fat on a pork shoulder increases the amount of available surface area, i.e. "rubstrate". Nobody will ever use this word.

"If you score the fat cap on that brisket you'll wind up with more rubstrate."
