When you see someone that you know you either don’t have a chance with or simply wouldn’t usually go for, but the opportunity shows, you wouldn’t turn it down out of simple curiosity. The idea comes from the way a hypothetical statement is set up. IF I had sex with this person, THEN I would know what it’s like with that person specifically.
