chaunce

Whole spices fried in ghee. The most important part of a preparation.

Heat ghee medium hot, add grated ginger. Then add any but few whole spices like cumin and fennel seeds, also bay leaves, cinnamon stick or chilli if desired. Fry only until little darkening of spice or smell appears (usually 10-30 seconds). Dash powdered black pepper and asafoetida in and the chaunce is done. Immediately add vegetables or pour the chaunce to already cooked ones.
Probably from hindi word chaunk.

Chaunky is a way of saying thicc. It is a way of saying chunky but more emphatically. Usually used to refer to a beefy guy.
