Chonchalada was first used in Las Cruces, New Mexico home of "The Whole Enchilada Fiesta", a 3 day long carnival centered around creating, as recorded by "The Guinness Book of World Records", the biggest enchilada in the world. Chonchalada is a hybrid of the Spanish slang word for vagina, "choncha" and the tasty New Mexican style, biggest in the world, "enchilada".
