A texture that is crunchy but smooth and at the same time feels gross in your mouth. It can sometimes be just a tad bit slimey.

Heat ghee medium hot, add grated ginger. Then add any but few whole spices like cumin and fennel seeds, also bay leaves, cinnamon stick or chilli if desired. Fry only until little darkening of spice or smell appears (usually 10-30 seconds). Dash powdered black pepper and asafoetida in and the chaunce is done. Immediately add vegetables or pour the chaunce to already cooked ones.
