Adults in an older age group, usually grandparents and/or g grandparents (boomers and older mostly), with more knowledge than todays youth.

That more mature person is trying to tell me how to do my job.

Mature cheddar is slang for "old money". If somebody inherited their fortune, they are classed as mature cheddar.
