A yummy hard aged cheese, sort of nutty in flavor, that comes from the Basque country in Spain and France. Once very hard to get, this cheese seems to be appearing in more and more gourmet food stores, natural food stores, and cheese shops in the USA. Pronounced "ee-dee-ah-SAH-bahl".
