The philosophy which respects animal rights.
Vegans believe that animals have natural, unalienable moral rights, including to life, bodily autonomy and freedom in general. To be vegan is to respect those rights and to refrain from exploitation, killing and other forms of harm, towards animals. To achieve this, vegans exclude animal derived products from their diet and other areas of their life.
Some go even further and contribute to vegan activism by pushing their views of not killing onto others, which is super annoying!
