To become worn or shabby; to fall apart.

This phrase comes from the idea that an animal that is no longer useful is eaten after being cooked in a pot.

Ted has really let himself go to pot since his college days.

going pot roast

The sudden onset of mental denseness, usually in relation to something unpleasant. Mental denseness as a dodge.

Joe and I were having a nice conversation, but as soon as I asked him about the $10 I lent him, I could see him "going pot roast" on me.
