"Popping off" is a verb used when you're doing extremely well and or performing like a professional/better than anyone in your game. Can also be used when you're being accused of cheating in a video game because the sheer amount of god like skill you possess.

What passes for country music for the last 15 to 20 years. The songs are really just regular pop or rocks songs produced with pedal steel guitars or a violin to make it "country".
Person A - "Hey, remember Southern Rock?"
Person B - "Yeah, bands like Lynyrd Skynyrd, .38 Special, Marshall Tucker Band, Blackfoot!"
Person A - "Well Southern Pop is the same idea. Carrie Underwood, Miranda Lambert, Shania, Lady Antebellum, Big and Rich...I could keep going but there's not enough time..."
