A term originally used by con men and other swindlers for a list of easy victims that they managed to "take" with no difficulty. Usually such a list gets sold around their dubious industry as a way to find "easy pickins." It also seems to be a common practice around the staffing and recruiting industry.

My missus farted so loud a duck couldn't have screamed loud enough. Water fowl were underfoot!
"mum you farted so loudly it sounded like you stomped on a goose"!!!!

"Slip the goose" means almost anything depending on context. It is the perfect expression because it invokes a strong visual, and yet it's vague enough that it resonates in a wide variety of situations with various meanings. Depending on how you say it and with what other combinations of words the meaning can mean someone did awesome, someone did badly, someone messed up, someone got confused, someone did something really tiring, or someone blew off work or other obligations, or even someone avoided a problem or tragedy.
Good - Hell yeah, man! You slipped the goose big time! Oh dang, you're lucky you slipped the goose.
Bad - Damn, you really slipped the goose. I don't know man, I slipped the goose earlier and not feeling it. The hell man, you slipped the Goose
