"I'm soft" may refer to these definitions:
"Soft" as in more emotional, less violent, and more stereotypically "weak".
Or: "I'm soft" as a metaphor for "deflating" and feeling the cuddly feelings associated with soft objects. This is used more as a phrase rather than the word "soft" being the focal point. When "I'm soft" is used in isolation, it usually means the person feels nice, usually after experiencing something heartwarming, cute, wholesome, etc.
