n. an excuse to take the easy way out, an excuse to not finish something in an acceptable way

This phrase was parodied by Monty Python to end some sketches. Instead of a climax or punch line, the police (cops) would turn up and arrest the characters. Therefore, they would literally "cop out" of finishing the sketch. The most notable was at the end of "Monty Python and the Quest for the Holy Grail".

Cop-cop 

A person who is not a Police Officer but believes himself/herself to be friendly with Police. Usually drunk and/or a douche bag stumbling form a bar. The "cop-cop" will approach a police officer or group of officers and attempt to strike up a conversation about police work believing that he/she is accomplishing an original or exceptional feat by asking what they believe to original or endearing questions.

The "cop-cop" can also be a security guard or other wannabe type. Often the cop-cop is not a wannabe or someone with a genuine interest or question but someone being a smart ass or believes himself to be clever, daring, or funny.

When 2 police officers get together for a bite to eat, usually in a small restaurant or diner.
Often seen at restaurants such as Luby's, Whistle Junction, Jim's, Las Palapas, Taco Cabana, Ryan's, random family-owned Mexican restaurants, and occasionally Chacho's.

"Hey Bill, wanna grab a bite at Jim's?"
"Sure Johnny, it's a cop date."

"Hey check it out, there's 2 cop cars outside that Luby's."
"Wow, there must be a cop date going on in there."

cop killers 

"Cop killers" are a type of bullet that can penetrate a police officer's body armor -- for example, a Kevlar vest. Cop-killer bullets have a stronger casing and a smaller bursting charge than regular bullets. Regular bullets are made of lead, which is considered a soft metal. Cop-killer bullets are made from stronger metals such as brass, steel, beryllium copper and iron. Cop-killer bullets are illegal for civilians to own, use or sell in most countries, including the United States and Canada.

The 38-year-old police officer was shot and killed with cop-killer bullets, better known on the street as cop killers. Authorities do not know how the suspect in the murder obtained the illegal ammunition.
