A snitch nitch --- I mean, a sniche niche (rhymes with "fish"), although at this point, I dunno fer sher how to pronounce it --- refers to da usually-unknown/unexplored employment-position of professional squealer, maybe one who watches to see when other people grant themselves a five-finger discount --- i.e., "snitch" something --- and then "snitches on them" to da cops.
