According to biology, human beings become attracted to each other as a result of their hormonal interaction. Obviously, concepts like 'gender roles' or 'gender' are not hormonal.
In a purely biological context, which is the only context in which sexual attraction exists, polysexual is just another term for somebody who is bisexual (able to be attracted to men as well as women), regardless of the societal role those men and women take.
